will focus on proper techniques and tasty recipes
for canning salsa. We’ll prepare and can two
different salsas and discuss the reasons for using
water bath canning versus pressure canning to preserve
the salsa. Participants will take home a jar of
each salsa at the end of the class.

and creative way of preserving your vegetables &
more, and ... it does not require a pressure canner!
You will learn step-by-step instructions on how
to pickle, including equipment, preparation, and
procedures for a wide range of vegetables, relish
and more. You will also learn some "secrets"
to embellish the taste. Hands-on, with take home.

Apples & Pears: Making & Canning Sauces.

will make and can spiced apple-pear sauces and learn
other tasty sauces blends. Great for eating at home
and as gifts! This class will also cover fruit dehydration.

Preparing and Canning Soups & Stock

The class will cover
preparing and canning chicken soup from scratch,
including stock, from whole chicken to chicken soup.
We will discuss the special precautions needed when
canning jars of mixed ingredients (meat, vegetables
and starch). Class is hands-on and participants
will take home a quart of the chicken soup made
in class. Taught by Holly Espenlaub.
Cost: $30.* This class is $5 more
than other classes (higher materials cost), alone
or in a 3-class package.

ideas for homemade holiday gifts. In this hands-on
class we will make chocolate truffles, fresh lemon
curd and spicy ginger snaps. We will cover the basics
of working with chocolate to achieve the proper
consistency, discuss the secrets of making great
cookies and share ideas for creative gift packaging.
